Life as Mom's weekly recipe swap theme this week is pasta. We love pasta here! It's easy, inexpensive, and feeds a large crowd. Some of our favorite pasta dishes are Queensland Chicken and of course my version of the Maine Diner's Mac & Cheese. But this old standby is a keeper and gets rave reviews...
Penne Vodka
Ingredients:
1/2-1box penne pasta, cooked and drained (or as much as you'll need) (I use whole grain pasta)
1/2 cup half & half
1 cup milk
2T. butter
2C. tomato sauce
(I rarely add vodka to this...it doesn't change the taste at all. Actually quite a few people prefer it without. If you want to add it in, make sure you bring to a boil for a while so the alcohol can "cook off".)
Directions:
In a pan, combine half and half, milk, butter, and tomato sauce until incorporated. Bring to a boil. Reduce heat and cook until thickened (you may have to return to a boil once or twice again). Cook until desired consistency. (we like ours a little thicker, so I reduce heat and stir occasionally until thick).You can either pour penne into sauce pan (which I prefer) and mix or plate penne and pour sauce over top.
