Supper Time...Jan. 25-31, 2009

*Meals are subj. to change w/o notice due to unforeseen circumstances, change of plans, migraines or meltdowns!!
**Recipes below and I will post pictures daily
Note: try to use free-range organic or all-natural chicken and beef, and organic fruits and vegetables when possible...and always try to use organic dairy!!

Sunday: Chicken Fried Steak
whipped potatoes
brown country gravy
green beans
corn
homemade rolls

Monday: spaghetti and meatballs
Meatballs: Just ground beef and breadcrumbs, mix, then roll into balls. Brown/cook in skillet with a little canola oil, then add in to sauce.
italian bread
salad

Tuesday: Quick before Daddy's game
Hamburger Helper meal
green vegetable (either green beans, peas, or broccoli...depends on which HH I pick out)

Wednesday: Chicken Fried Chicken (it is a favorite, so it was a request!)
(Make extra chicken for tomorrow nights meal)
roasted potatoes
gravy
peas

Thursday: Quick and Easy...Dr. appts today and practice tonight. I will reheat leftover chicken cutlets from yesterday's meal
Chicken Parmesan
penne vodka
salad or green beans

Friday: Game and family in from out of town (To see Daddy's team play Papa's team!!)
Dinner out or at my parent's before game

Saturday: Family Fun Night w/extended family
"New England Saturday Night"

Penne Vodka:
1/2-1box penne pasta, cooked and drained (or as much as you'll need) (I use whole grain pasta)
1/2 cup half & half
1 cup milk
2T. butter
2C. tomato sauce
(I rarely add vodka to this...it doesn't change the taste at all. Actually quite a few people prefer it without. If you want to add it in, make sure you bring to a boil for a while so the alcohol can "cook off".)
In a pan, combine half and half, milk, butter, and tomato sauce until incorporated. Bring to a boil. Reduce heat and cook until thickened (you may have to return to a boil once or twice again). Cook until desired consistency. (we like ours a little thicker, so I reduce heat and stir occasionally until thick).
You can either pour penne into sauce pan (which I prefer) and mix or plate penne and pour sauce over top.

  2. I looked at your blog because you were at mine. I am so glad I did. I bought a bottle of Vodka Pasta Sauce last year and we loved it. I am going to use yours and add some hamburger meat. Thanks.

  3. Chicken fried steak....yum!!! It is one of my favs! I like having it at the Cracker Barrell when we go there. I have made it at home a few times. Great menu. Have a great week!
