Supper Time...Jan. 18-24th, 2009

*Meals are subj. to change w/o notice due to unforseen circumstances, change of plans, migraines or meltdowns!!

**Recipes below and I will post pictures daily
Note: try to use free-range organic or all-natural chicken and beef, and organic fruits and vegetables when possible...and always try to use organic dairy!!

Sunday: Pot Roast w/potatoes & carrots (in crockpot)
homemade rolls

Monday: homemade chicken soup
grilled panini sandwiches (ham, turkey, & swiss)
fruit salad

Tuesday: "dinner playdate" (Dad's are out coaching...)
Kids: Dino nuggets, bowtie mac & cheese
carrot sticks
crescents
Mom's: Pasta alfredo or penne vodka w/chicken
salad
Italian bread
Chocolate brownies (for both kids and mom's!!)

Wednesday: Bacon cheeseburger potato pie
green beans
homemade bread

Thursday: Breakfast for Dinner!
Quick & Easy...basketball practice tonight & Daddy's got a game!
Pancakes & waffles
eggs
ham/bacon/sausage
hashbrowns
fruit salad

Friday: Chicken and wild rice pancakes
Applesauce
green beans

Saturday: Family Party
Bringing: a dessert

Pot Roast:
1 bottom round roast (I have had this in my freezer...I usually stock up when they go on sale. A bottom round is a great cut of meat for the crockpot! Inexpensive and becomes fork tender when slow cooked!)
1/2 packet of onion soup mix
2 bay leaves
1 beef bouillon cube
1C water
Organic baby carrots
Organic potatoes peeled and cubed

Place roast in bottom of crock. Sprinkle onion soup mix over the roast and pour in 1C water. Add bouillon cube and bay leaves. Add in vegetables.
Cook on high 4 hours. Put down to low and cook another 2-4hours until desired tenderness...I cook mine another 4 hours because then it falls apart it's so tender. That's how we like it and that is how I get the most meals out of one roast.


Chicken & Wild Rice Pancakes:
1 pkg. long grain & wild rice (I buy the Uncle Ben's microwaveable pouch...you can usually get these for free or close to free w/coupon)
2C. chicken (boiled and cubed)
1/2C. bisquick mix
3 eggs

Cook rice according to pkg. then cool. Combine rice, chicken, and remaining ingredients. Drop a lg. spoonful of mixture onto a hot, non-stick skillet coated w/ cooking spray. Cook 3-4mins. on each side or until lightlty browned. Serve with applesauce or sour cream for dipping. Store in containers in refrigerator or wrap and freeze in ziplocs.
