School's Out Cool Summer Desserts

12:15 pm today marks the last day of school...and the official start of SUMMER!! We are really looking forward to having daddy home with us (besides running football and basketball camps for a week each...not too bad!!) So, along with all of the fun activities, crafts, and trips we've got planned (stay tuned...) that means having lots of food and snacks on hand! And with all this terrible weather we're having here on the east coast right now (rain every day so far in June through the end of next week and 68° weather) I'm hoping for some hot days in the near future!

A favorite summer dessert and a kid-pleaser (of all ages!!) are homemade ice-cream saucers. Large homemade chocolate chip cookies with ice cream sandwiched in the middle. You can dip the sides in mini chocolate chips, sprinkles, coconut, or whatever you'd like! And if you're pressed for time and can't make "June Cleaver's" (homemade cookies) as I affectionately call them, like me the other day when I had a drop-in playdate, I just use the bagged Chips Ahoy. I always have an unopened one in the pantry closet, and eight of them (enough for four saucers) in the freezer just in case!! Oh...and a tip...microwave the ice cream for about 20seconds to just soften it up the littlest bit before scooping it onto a cookie and topping it with another. Freeze for about 15 minutes after "embellishing" it with toppings to set.

And lately, another one of my favorite desserts of choice is the Strawberry Pretzel Pie (recipe originated from fellow Coach's wife Amy (we have affectionately changed it's status here to a "pie"...) So grateful she shared, because we just love it!! I crave it actually!
