Cookin' Round the Campfire...

This year the Cozy family will be camping for the first time...ever!! We're going to rent an RV for a few days and give it a whirl to see if we like it. See...I married "City Boy" (in comparison to where we live now!) and the first and last experience he had camping as a child was one miserable night in a tent; and while I grew up in the country, I must admit I'm a "Night-At-The-Sheraton" kinda gal! (Roughing it for me back in my high-maintenance days was when my sister took me to Nantucket and made me sleep in a B&B. Thankfully we had a room with our own bathroom!! Well, I grew up, and these days I'd die for a night at a B&B on Nantucket... my how I've changed!) Anyhow... We're thinking of maybe buying a travel trailer RV, so we thought renting one and finding out if "camping life" is a life for us! So many families that go camping just rave about it and have such great memories! We'd like to get in on some of that "family fun".

And when we do go camping, you can bet these Hobo burgers I tweaked from a Paula Deen recipe and Dessert Burritos will be on the menu!!

Hobo Burgers
(can also be cooked on the grill...as I did tonight...or in a 350° oven)

Ingredients:
1 lb. ground beef
1 C. cracker crumbs (I used Ritz tonight, but you can use Saltines)
1 egg, beaten
1/4C. lemon juice
1C. grated cheese (I used shredded cheddar tonight for a different twist and was great!)
1/4t. salt
1/4t. pepper
1/4t. garlic powder
4 medium red potatoes, sliced thin
1 lg. onion, sliced thin (I used these just for flavor, then tossed)
4 slices bacon

Directions:
In large bowl combine ground beef, cracker crumbs, egg, lemon juice, cheese, and seasonings. Mix well and shape into 4 patties.
Place each patty onto 2 layers of heavy-duty foil (enough to cover and close). On each patty place potato slices and onion. Slice the bacon in 1/2 and place both pieces on top. Seal foil tightly and cook on campfire, on grill, or in preheated 350° oven until done (approx. 45mins.)
And for Dessert...
Dessert Burritos
(my mouth is watering just writing about them!!)
Required:
knife
aluminum foil
spoons

Ingredients:
tortillas
(Choose any or all of the following or add your own ideas...)
pie filling - blueberry, cherry, apple, ...
chocolate chips
nutella
mini-marshmallows
peanut butter

Instructions:
Open the cans of pie fillings and put a spoon in each one.
Tear off squares of aluminum foil.
Put a tortilla on the square of foil.
Add peanut butter or pie filling.
Sprinkle with chocolate chips and/or marshmallows.
Roll up the tortilla and fold the bottom edge in.
Wrap foil around tortilla and place on grill above fire or on ash around edge of fire.
Wait for the ingredients to melt.

Hints:
Main problem is putting too much stuff in the burrito - try to talk people into taking smaller amounts.
Put all the tortillas in a foil wrap and carefully heat them before so they are more flexible.
Putting tortillas directly into the coals will burn them - keep them away and rotate often.
Each person should mark his burrito wrapper somehow so he knows it is his - special foil fold or permanent marker or series of poked holes in the foil.
