Organic Chocolate Chip Muffins


I am insistant on the children getting a good, well-balanced breakfast to start the day off right. (I pray they don't end up like their Momma...counting two cups of coffee "light and sweet" a meal!) However, my kindergartener is not much of a breakfast eater, which is very frustrating (my three year old on the other hand is crazy about breakfast foods and will eat them, and does, all day!!) After literally trying every breakfast idea I had I asked her what she would like to eat, other than her usual toast with jelly, dry cereal, or an apple. Her answer: she likes chocolate chip muffins... not the mini bagged kind, not the kind from the bakery, but the kind I make occasionally. Well okay then! Chocolate chip muffins for breakfast it is! And...these are quick and organic. Works for me!!

Organic Chocolate Chip Muffins
1 box organic yellow cake mix (these are now regularly available at supermarkets... not just health food stores!)
1 box instant vanilla pudding (I use half pudding and rest organic vanilla protein powder for a little more of a "health kick") If you can find organic pudding...great!! If I have some, I use it, but can only find it at the co-op two towns away!
three organic eggs
1 1/3 C. water
1/3C. organic canola or vegetable oil
1/2 bag organic choc. chips
1T. flax meal (optional)
1T. wheat germ (optional)
Follow directions on cake box for preparation...add in pudding/protein powder before mixing. Prepare muffin tin with cup liners or organic cooking spray (not conventional...that stuff is terrible!! or good 'ol butter!) Fold in choc. chips at the end. Spoon into muffin cups. Follow baking directions on box. *If you decide to add one or both of the optional additions, just put them in with the other ingredients when mixing. You can't taste either of these at all...just bakes right in. My kids never know!! I'm one "Sneaky Pete!!"

One box recipe made 18 regular sized muffins, 12 minis and six deep heart shaped muffins...that was all the tins I had! I'll be using half for the remainder of the week, and I'm definitely freezing the rest! PS...These are so yummy...consider yourself warned. I can't stop eating them!!
